Little Texican Chicken Enchiladas
I wish I used my slow cooker more often. This weekend I was determined to try out a Texican little meal, and because it came out so yummo, I thought I'd share it. My intention was to follow recipes I found on Pinterest but couldn't find exactly what I wanted so I mixed up a few instead.
First, I made this Chicken Ranch Taco recipe without the tacos. Making the chicken in the slow cooker instead took 6 whole hours, but it shredded it and marinated it perfectly.
Then, I followed the 2nd part of this enchilada recipe, but realized I didn't have a cheese sauce, so I just used the same sauce from the crock pot. I added cheese on top and we actually thought it didn't need the extra cheese sauce!
And finally, I added a side of Texican-style rice that I whipped up on my own with corn, cumin, and chicken broth. I added a dollop of sour cream, and just like that, little Texico was born in my kitchen. :)
